On Home Cooking

I feel so content having cooked so much last week! Marcus and I are probably, ashamedly, the king and queen of buying groceries but not using up everything. We have thrown out too many chicken breasts gone bad or too much veggies gone bad. You know. So this week I made a goal of buying only what I would use and using it. Success!

We enjoyed a delicious crock pot meal (thanks Sarah Kole!) of Crock Pot Pizza. It is my new favorite recipe!!! However I recommend making it for a group of people, for just the two of us we got about 3-4 meals out of it. We even made our own homemade egg & cheese McMuffins (like at McDonalds). Although the flavor was lacking, it was waaaaaaay healthier for us. I think maybe just using a sharper cheddar would help next time. This weekend we made Baked Spaghetti and fed 5 of our good friends for dinner. Last night I made Chicken Enchilada Casserole (thanks Becky Goerend!) for us and some other friends who came for dinner. Tonight I have one more recipe to make and our groceries will be all used up.

It feels good to stop being wasteful. And even feels good to watch my pantry and fridge get more and more bare because we're eating things instead of throwing things out.

It's the small things in life that bring me great happiness :)

So tonight while I have some free time I will once again pull out some recipes, think ahead about the week and who will be around, and get some groceries. We're also cooking a meal for a family tomorrow and we're debating on three ideas. What would you choose?
  • Breakfast for dinner (scrambled egg casserole)
  • Tator Tot Casserole (thanks Brian and Marcus)
  • Baked Spaghetti (since it was such a hit Sunday)
  • Hamburger Pie (since I still have ingredients left I could make it up tonight, ahead of time, while I am less busy)

I would be mega excited for tator-tot casserole!

I too enjoy trying to use things up. I hate throwing food away, but sometimes I do! Its like throwing money down the sink.

I've loved doing this! It is so helpful when students drop by and I'm not having to run around trying to figure out how to make a meal out of sweetened condensed milk and garbanzo beans... or whatever random items I have in my pantry.

I MUST have that crock pot pizza recipe.
I will send you my recipes soon (sorry I've been slacking on that)!!

Oh, p.s. I buy chicken from costco but freeze it. Then I take the meat out either that early morning or night before and thaw it. It's kept for me about three weeks of always having chicken on hand. Works like a charm!

I'm glad you had success! I too, try to do this. The problem we have is throwing out the left overs! I'm not a great left over eater. I also would like the crock pot pizza recipe!

Crock Pot Pizza sound soooo gooood!

When I was in Italy they never bought groceries for more than two days at a time. They bought the fresh produce almost daily so that they only bought what they needed. The hard thing with buying produce is that it goes bad in a few days.

I love casseroles because you can package and freeze the leftovers. Then it's simply putting it in the oven and you've got a meal done. that reminds me... I have a chicken casserole in the freezer, dinner tonight ;)
